Oriental Noodle Soup

Oriental noodle soup
serves 6

1.8 litres/3pt beef stock
1 teaspoon finely chopped
lemon grass
2 teaspoons light soy sauce
175g/6oz vermicelli, broken
into small pieces

• Bring the stock to the boil with the lemon grass and soy sauce.
• Add the vermicelli and simmer for 6 minutes or until the noodles are just tender. Serve hot.
